You're right in the fact that biting ears is a cowardly act. However, Tyson had been illegally headbutted on several occasions. Watch the replays. The ref did nothing to stop it. Tyson can even be seen letting the ref know. Over and over again he was headbutted. Sounds like a cowardly act when you know you can't beat somebody according to the rules of boxing you resort to headbutting. Tyson responded. And I don't think Holyfield ever headbutted again.
