I enjoyed the first season of Gangland on history channel even though it was inaccurate..
It has been a few years now but I really enjoyed Martin Scorcese's "A Personal Journey through American Movies" back in the 90's

His passion for Film is infectious and he has done so much in preserving and restoring old prints of stuff that would have disappeared without even taking into account his own fantastic back catalogue, He had a hand in editing the original Woodstock film and he knows how to construct a documentary. He maintains the arc over many hours and if you want to know anything about Film it is as good a place as any to start from. The Director as Iconoclast section is brilliant.
I love Waldemar Januszcak the art critic from The Times. His documentaries are always very watchable, entertaining and informative. He has a point of view but you do not have to share it to be carried along with him. He loves art, is knowledgeable and has little regard for conventional theories, and that is a pretty good place to start from. The Dark Ages:An Age of Light was great
For an introduction to Modern art his film on Manet - Manet:The Man who Invented Modern Art is great

Get fascinating towards the end. Cant disprove two of these mens inventions.
