Stay at waht feels natural to yourself.

Let your body dictate the weight issue.

    Well I'm a shade over 6 feet.

With minimal effort I can bulk up to walk around comfortably at 12 stone. (16
However, when I fall into my pure boxing routine I operate best at 11 stone. (155)
At 155, I'm 100% confident I could beat up the 168 version of myself with ease as I feel so much crisper and damaging at 11 stone!

So get into a good routine, apply it and then weigh yourself after.
At the beginning of your journey you shouldn't let yourself be constrained by weights. Let your bodyt adjust to boxing and find it's own optimum weight.

Just get in shape and see where your body ends up and where you feel healthy and strong. If you are in the US you really don't need to worry about weight classes until you have 5+ fights and depending on how active you are or where you live, that could take a year.
