How do I change the settings of Microsoft Outlook?

This has been nagging me for some time. It has the email address which no-one uses stored as it's default and I have zero idea on to change it. I was wondering if any of you technical geniuses here knew if ti was even possible to change the dfault settings on it? Rep for any useful info brothers.

What kind of Outlook are you using 2000,XP, or 2003? Let me know and I might be able to help you out.
