strange.......
Ive noticed ever since ive been training and eating right, I tend to not eat as much as I use to when I use to eat lots of junk food and soft drinks. Its not like im still hungry and I choose not to eat, it just I thought after all my training I would be even more hungry, I mean, I sort of am, but I eat like an orange or an apple and Im just not hungry anymore when I use to eat junk food and I would eat over and over and over, like I could never get enough. Is it just me or is there anybody else out there that tends to not eat as much as they use to? And could this be a bad health habit or anything?

You'll be eating better foods and your metabolism will be regulated from you being more active.

i've heard people who eat right and workout right don't need to eat as much during the day. they also don't need AS much sleep. (still should try to get your 8 hrs. in anyway, tho.)

Not entirely true, if you where eating an average amount of food and getting an average amount of sleep then if you do more, that won't meet your bodies needs. you need nutrients and rest to recover and adapt to training.
