I guess there are a few options.
One guy you didn't mention who I'd love to see Arreola in with is Andrew Golota. He was in good form with wins over Mike Mollo and Kevin McBride but then had that arm injury that caused to retire after a round against Ray Austin, him arm looked horrific after the fight.
If he's healed up though that could be a good fight. Jameel McCline could make for a decent opponent as well. Not sure what Calvin Brock is doing these days but any of those 3, maybe even Mike Mollo would make decent opponents in fights that would be fun to watch. A lot easier to negotiate than the ones you mentioned as well imo, I imagine they would all jump at the opportunity if offered and not already committed.

To me Thompson, Chambers, Ruiz, and Dimitrenko look too dangerous for Arreola to fight.....if it's true that everyone cares so fucking much about their records that they don't want to even chance a loss vs anyone.

You're right about that. Everyone is so afraid to lose their 'O' that they actually hurt their development by not taking risking fights that win or lose will teach them something about fighting. I can't imagine Arreola taking a Thompson fight. I'd like to see Chris get in with Dimitrenko and see how he deals with a jumbo HW who isn't ancient like McCline. Peter would be an interesting test, too, and I can see that possibly happening because the fight would be marketable.

I would take Arreola or Haye fighting Ray Austin or Larry Donald if for nothing else to prepare them against bigger heavyweights....they shouldn't have trouble winning those fights but for some reason neither Arreola nor Haye want to fight a big guy other than Wladimir of course....but they haven't prepared properly and if they get Wlad before preparing it's just going to be an ass whuppin'!
Arreola has been knocked down recently and if Walker knew how to box he would have finished Cris off. Wladimir will pick him apart
David Haye has been knocked down several times and already KO'd by a cruiserweight.....he needs to prepare AND to get a better defense but don't let me tell anyone we'll just find out on fight night
