Lamon Brewster vs Sergei Lyakhovich is probably the best Heavyweight title fight, since 2000 i can think of other better Heavyweight fights since 2000, but not title fights. And obviously Lennox Lewis vs Vitali Klitschko is up there aswell.

The Klitschko's are getting the same press Lennox Lewis got back in the day. Lennox was in his fair share of snoozers but back then everyone would point to how the fights ended and right now it's no different except the trainers for whoever Wlad and Vitali fight are more willing to throw in the towel.
Someone has to bridge the gap from contender to legitimate THREAT for there to be a meaningful fight and if you can't beat journeymen and other contenders in a manner to make you "scary" in the eyes of fight fans and the media then the Klitschko's will continue to have their way and you bums will continue to cry about it.
As an American I really hope Deontay Wilder can keep putting out solid results and improving.

I'd discount Lewis v Klit, last for me was Lewis v Tyson.
Lennox/Vitali was a quality fight and it's the last one I remember being any good. I liked Peter/Toney 1 too, but that's more my Toney agenda coming through. I thought he did more than enough to take that one.
Danny Williams gave us a memorable effort against Mike Tyson.

If it's MEMORABLE you want, and not necessarily the best, I'd have to say Klitschko vs. Brewster 1. I just couldn't believe Wlad punched so much that he couldn't lift his arms anymore. I was just sitting there going "hit him dude, hit him...he sux!!!" I think I pinched myself 3 times after that fight was over.
