Post count don't make you a vet. Guys like ICB and Cutmemick knocked out 10,000 in about 12 months.
10,000 just means you've spent enough time here and repeated yourself enough to make you a depressingly sad, sad, seriuosly sad, genuine saddo.
I would say 4-5 years with an average of 500-600 posts a year should be a good gauge, it's not all about the number of posts but also about how you've seen peoples coming and peoples going, that along the epic moment of this place.
I just checked my average - 1.57 posts per day
Last checked it about 2 years ago and it was 1.6, I'm slipping with age but I am consistent.
A veteran is not a prolific poster - by definition its someone who's been around a long long time.
Think the site has been going about 9 (?) years maybe 10 ? None of us thus been around long enough to be vets yet ;)

Oh lots and lots and you need to have put lots of time in too. I'd say a fair few of those with 10K posts or more are Saddo vets.

There isn't a fixed post number or a fixed number of days and years from your join date as the site itself is getting older and average post counts are increasing.
5 years ago someone who had been here to 2 years was a veteran and someone with 5000 posts was a prolific poster.
Obviously now 2 years doesn't seem like long at all and 5000 posts is what most of the regulars have at least.
As the site continues to exist average post counts will go up as the average length of membership time.
Therefore I'd say it's more a percentage of the site average that determines veteran status. Someone who has been here for more than half of the lifespan of the site, someone who is in the top 10 percentile for post count etc would be examples of veteran posters imo
I would argue that 20,000 posts is the standard for 2011.
I didn't realise that there are only about 4 people with over 20,000 posts. I revise that figure to 10,000.
