It's a bit of a cop out, but there is no way I could pick just one song. My musical tastes vary and wax and wane too much over time. Right now it would probably be something from the Pogues, perhaps A Pair of Brown Eyes or The Body of An American.

edit: I guess if I had to choose one I would have to pick some incredibly long and intricate classical song so I would be less likely to get bored with it as I would continually be discovering different elements and facets of the song.
