Well there is the statment of "where the rubber meets the road"..meaning this is where something is finalized or resolved. I'd imagine the term rubber match predates this though.

Then comes the rubber match. It's generally been called a rubber match because it can go either way for either player...like a rubber band...hence the rubber match.

The deciding win...that's what I've always thought it meant.

rubber bridge is the source of the term ... a rubber is the best two out of three games. If same team wins two straight games the rubber is won, no need to play the third game, like when a team wins 4 straight in the world series.

To call a third fight after two split wins a rubber is just to use the bridge term in a different context. Just another way of saying best 2 out of three. It's a loose fit at best.

Got nothing to do with bands that can march either way or stretch either way or with boxers (or boxing fans) that swing either way.
