Jones was a natural 160lber, not 175lb and I doubt Hopkins could make 160 again.
Hopkins might not be able to make 160 now but he wasn't having problems making the weight. He chose to move up to fight Tarver at 175, gained the weight and won in his first attempt.

Likewise Jones, bulked up by 40 pounds and went and won a heavyweight title in his first heavyweight fight.
