Pitbulls are instinctively dominant, you cant have males together, they will inevitably fight if they weren't raised together from puppies. Once one achieves dominance the others wont fight anymore. Just for the record, pitbulls jaws have no locking mechanism. They are structured the same way any other dogs jaws are. They are just like you said, incredibly strong.
I did some research on this a while ago and found out the reason pitbulls can be tempermental is cause their brain grows at a faster rate the their skull and they have a lot off pressure built up in their heads that can result in headaches which is why they sometimes snap. Thats why they usually snap when their being provoked in some way.
