2 bucks. Guys paid 30 for the room, there is a 5$ discount so the room price = 25. Therefore, they received in total 5 back, giving them 1$ each means that out of the 5 bucks they had to receive back, they had 3 back so 5- 3 = 2.

So she took 2 bucks, it's just that the way the thing is phrased it looks tricky and it's a "false logic" thing since it is what they all receive back from a common pot of "returned change"

The men paid £10 each, they got £1 back, that leaves £2

3 X 9 is 27 but they never paid that, they paid £10 each.
