It would depend on how many lengths I was managing in the swimming pool.

I'd fight midgets, mongoloids and bearded ladies, and stay the hell away from travellers and bears.
I'd use the same criteria that fighters have been using for 100 years to pick their fights: risk vs. reward.
Assuming I'm an up and coming prospect, of course the obvious I would want to fight the big names, because I stand to gain more financially and in rank. Of course that means the guys at the top of the sport with the biggest fan support: Mayweather, Pac, Ward, Martinez, Froch, ect.
There are also cash-cows who have a lot of fan support, who even though aren't ranked at the top, could still offer a lot of heat and cash if you fight them. Guys like JCC Jr. Gatti was a great example of this (a fact that Floyd Mayweather exploited).
Guys I don't want to fight are big risk fighters who offer little to average reward. We all know who these guys are. Lara is a great example, GGG used to be it but since he's gotten so much press lately I think he's moved into the "high risk/high reward" catagory.
Paul Williams was a great example in his prime.
Bernard Hopkins, even though he's a huge name in the sport, is now in this catagory IMO due to his age. Beat him and people will say "ah well, he finally got old", and on the other hand he has the ability to make you look like utter shit, so I wouldn't wanna fight Bhop.
