Found that out myself regarding cans some time back. Commercial canning is pretty stringent and mainly you're dealing with a quality not safety issue when it comes to sell-by dates. No dents or rust in dry space and sealed cans, not pull tops, really keep for a few years beyond most dates. I keep a smaller storage unit of canned and vacuum sealed products. Usually 'rotate' cans every six months for a SHTF moment, stews, meats, potatoes and veggies etc and once they hit 1 year over we'll just drive a trunk load over to a local food pantry who are more than happy to take them. Bread I had no idea about. Wonder if same holds for bagels and muffins etc.
