I can honestly say the best food I ever ate was in China. The layered flavors are amazing. I brought home a couple recipes one of which required “champagne vinegar” I’ll be honest I didn’t even know there was such a thing but it’s flavor profile is nothing like “vinegar”. So that particular dish used champagne vinegar and sesame oil along with 15 other things. When I sat down to eat it I almost laughed how good it was. Never before had I cooked something with such layered flavors. Of course I lost the damn recipe but damn that shit was good, pretty much on par with “true” Chinese cuisine which is much different than the many small Chinese restaurants all over the us, which I have to say aren’t horrible, just not real
