If you walk around at 180 pounds between fights, were an Undefeated Lineal Light Welterweight Champion + Welterweight Champion 41-0 and you had the opportunity to fight one of the greatest Lightweights in history before he retired at Light Middleweight for $8 million (arguements sake) would you?

the answer is yes... in a heart beat...
I'm not trying to be obnoxious, but I'm really not following. Are you asking (rhetorically) if Hatton would sign on to fight ODLH? Of course he would. Everyone in the biz wants an Oscar fight. This fact, however, implies that not everyone who wants an Oscar fight gets an Oscar fight. And on this point, I just really disagree with you:

There are plenty of other exciting fights that Oscar could make with guys his own size who are bigger stars than Hatton (Winky, Shane if they decide to renege on their promise not to fight each other--even Spinks would sell more than a Hatton fight, Cotto if he continues to rise in weight class, for instance), that would be bigger events, and that would make more money. I'm not so convinced Hatton goes down as great in the history books. He's beaten one star. -->

And I disagree with this. Hatton fought against a great boxer in that boxer's last fight. Tszyu was old, injured, inactive, and ready to retire already. Would he have fought on had he won? Probably. Would this fight have "ended his career" if he weren't old and injured to begin with? No.
