I went last year mate, it's awesome.
Can I recommend a tour of Madison Square Garden and Macy's shopping centre, seriousley get as much stuff as you can from Macy's as the dollar is so cheap compared to the pound.
Also don't have breakfast in your hotel, go to Deli's they are fine and order pancakes and syrup
My Mum is just booking us and our family to go over Christmas and New Year, we've just booked to got to Lanzarote in 3 weeks to get away from this miserable English weather.

You get a better breakfast from them,then anywhere else,except for maybe the Deli that used to be on Avenue A(I dont know if its still there)but I usually go for the egg sandwich

Lefty, you're going there for New Years? You are a crazy man!! As much as i'm sure it's cool to experience, it is a MAD HOUSE.. I have a friend who is a cop in the bronx and he said that he'd be able to get me and my girlfriend right to the front without a wait, but i still wasn't even slightly leaning towards going.. Think of having the most amount of people you could EVER imagine completely crammed into the same place in the streets.. No where to go to the bathroom so people piss wherever they can find, and normally the performers suck.. But again, i'm sure it's all about the experience..
And for you Memphis.. if you're into italian food at all, go to Carmines Restaurant, i forget on which street it is on but i can look into it if you're interested.. Everything is served "family style" so you orders platters as opposed to single entrees, but the food is AMAZING.. There is a Carmine's in NYC, somewhere like Bermuda or something, i think one in cali, and for SOME STRANGE REASON, they decided to put one at this sort of 'casino' place about 20 min from me.. why? i don't know, but how happy am i? haha.. enjoy your stay Memph!

Mate just do all the normal touristy stuff first time round. Empire State and all that. There's a company called Greyline tours that have two open top bus loops with a guide. You should do both. They're also handy first time around to help you with your bearings. You can buy tickets from the guys in Red jackets and BB caps pretty much anywhere in Manhattan.
Also, the scale of the place. Lots of places are walk-able but seriously, it's effing huge. The 'blocks' are massive and what looks like a 5 minute walk on a map can actually take forever.
Get show tickets from 'tkts' behind times square. First come first served...but I know you love a musical
For food I would echo what's said above and recommend pretty much any of the delis. In fact...I recommend pretty much everywhere. You won't go wrong in Manhattan for food (try the cheesecake at the Carnegie Deli).
If you fancy something a bit 'high class swanky time' try Maze at The London NYC (it's the 'cheaper' of the two Gordon Ramsay restaurants there but the food is amazing). Me and Mrs Steelie ate for about £60 between us...and for a 2 michelin star restaurant your talking three times that back here.
