    Would like if we could assemble a list of the best complex carbs. We all know things like pasta and so on, but I think a list would be good to have and help us mix it up and keep the meals from getting boring while still ensuring this key ingredient is being used properly. I'll give a look and get back to this thought tomorrow.

    Will get it going :

    Bran, Wheatgerm, Barley, Maize, Buckwheat, Cornmeal, Oatmeal.

    Pastas, Macaroni, Spaghetti etc. Brown Rice, Other Root Vegetables, Granery Bread, Brown Bread, Pita bread, Bagels, Whole grain cereals, High fibre cereals, Porridge oats, All bran, Wheetabix, Shredded wheat, Ryvita crispbread, Muesli, Cassava, Corn, Yam, Oatcakes, Peas, Beans, Lentils.

    Prep Time: 15 minutes

    Cook Time: 1 hours, 45 minutes

    Ingredients:

    • 1 cup dried chickpeas or 16 oz. can of chickpeas or garbanzo beans.
    • 1 large onion, chopped
    • 2 cloves of garlic, chopped
    • 3 tablespoons of fresh parsley, chopped
    • 1 teaspoon coriander
    • 1 teaspoon cumin
    • 2 tablespoons flour
    • Salt
    • Pepper
    • Oil for frying
    Preparation:

    Place dried chickpeas in a bowl, covering with cold water. Allow to soak overnight. Omit this step if using canned beans.

    Drain chickpeas, and place in pan with fresh water, and bring to a boil.

    Allow to boil for 5 minutes, then let simmer on low for about an hour.

    Drain and allow to cool for 15 minutes.

    Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour.

    Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.

    Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.

    Fry in 2 inches of oil at 350 degrees until golden brown (5-7 minutes).

    Serve hot.

    Serving Suggestion
    Falafel can be served as an appetizer with hummus and tahini, or as a main course. Stuff pita bread with falafel, lettuce, tomatoes, tahini, salt and pepper. As an alternative, falafel can be formed into patties and served like a burger.

    NGREDIENTS

    • 1 (15 ounce) can chickpeas (garbanzo beans), drained
    • 1 onion, chopped
    • 1/2 cup fresh parsley
    • 2 cloves garlic, chopped
    • 1 egg
    • 2 teaspoons ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon salt
    • 1 dash pepper
    • 1 pinch cayenne pepper
    • 1 teaspoon lemon juice
    • 1 teaspoon baking powder
    • 1 tablespoon olive oil
    • 1 cup dry bread crumbs
    • oil for frying
    • 1 (6 ounce) container plain yogurt
    • 1/2 cucumber - peeled, seeded, and finely chopped
    • 1 teaspoon dried dill weed
    • salt and pepper to taste
    • 1 tablespoon mayonnaise






    DIRECTIONS

    1. In a large bowl mash chickpeas until thick and pasty; don't use a blender, as the consistency will be too thin. In a blender, process onion, parsley and garlic until smooth. Stir into mashed chickpeas.
    2. In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together; add more or less bread crumbs, as needed. Form 8 balls and then flatten into patties.
    3. Heat 1 inch of oil in a large skillet over medium-high heat. Fry patties in hot oil until brown on both sides.
    4. In a small bowl combine yogurt, cucumber, dill, salt, pepper and mayonnaise. Chill for at least 30 minutes.
