The only night there was a full moon he did.... Sookies Gran... The other ones were not on full moon nights... But he still murdered them due to their being close to vampires and in my thinking him seeing them as threats to be turned. He does not want to see their numbers increase... I was thinking the girl was another invitee to the party. After the killer finished with her, he came after Sookie. It can't be the vet- that's like too easy. It's gotta be the sheriff or the other cop, but the person's outline looked like Sam's. Maybe... just maybe... it's a shapeshifter who can shift to look like other humans. Sam didn't say that was impossible, just that humans were too complex. I would take that to mean too complex for him to do.
