That was Gabriel Krizan vs. Angel Torres. Gabriel Krizan has never fully recovered from that punch. I think your assessment is correct in calling it cowardly. Because he obviously didn't think he could beat him when his guard was up so he punched him when his guard was down. He knew that Gabriel was looking to touch gloves to start the match and he hit him anyway. Because it wasn't an act in the heat of the moment. It was well after the fight and after the cards were read.
I'd also add to the list of most cowardly acts,
- Panama Lewis stripping the padding off his fighter's gloves.
- I don't remember the names but they showed a clip during a FNF or something where one of the fighters raised his hand to touch gloves at the start of the fight but the other guy smacked him with a sucker punch and instantly knocked him out. I know it's not against the rules and you should protect yourself at all times, but that was the most gawdamn cowardly act of unsportsmanship.
