    Default Sesame oil

    Sesame oil is a wonderful thing which can really go on a lot of different foods. Besides making Asian style dishes involving fish and vegetables, sesame oil is also a wonderful balanced and nuanced healthy oil with a really rich deep dark roasted sesame taste. It also really enhances noodles and fried rice dishes. Sesame oil is an addiction and once you start to get the sesame oil inside of you you will start to sip it out of the bottle in little sips and eat sourdough pretzels with it. It is a great combination and you should try it. Sesame oil is one of the miracles of the foods of the world. I have found the Japanese sesame oil of the brand called Kadoya to be among the finest. South Korea also has some very good brands. Sesame oil is one of those things that you can get addicted to and you can eat it with a kind of snack and it also goes good a little teaspoonful in a nice Asian omelette in which you use onions and peppers.

    My wife and I use it in many dishes. It really has a very nice aroma while you are cooking with it

    It is lovely but you have to be careful not to overdo it. Sesame seeds are great too.

    I can honestly say the best food I ever ate was in China. The layered flavors are amazing. I brought home a couple recipes one of which required “champagne vinegar” I’ll be honest I didn’t even know there was such a thing but it’s flavor profile is nothing like “vinegar”. So that particular dish used champagne vinegar and sesame oil along with 15 other things. When I sat down to eat it I almost laughed how good it was. Never before had I cooked something with such layered flavors. Of course I lost the damn recipe but damn that shit was good, pretty much on par with “true” Chinese cuisine which is much different than the many small Chinese restaurants all over the us, which I have to say aren’t horrible, just not real

    Good points walrus. I wish I could try some of that champagne vinegar. I used to buy from a Chinese store in Chinatown in Malaysia a kind of Chinese vinegar called Chinkiang.... It was really delightful. I also really love fish sauce that brown colored sauce you get from Vietnam or Thailand it really enhances dishes.

    Ask for Chinese restaurants in the US, it is just like you say: while I was teaching a class of 29 mainland Chinese students back in Kuala Lumpur, I printed out the Chinese menu from my local Chinese restaurant in New Jersey which had the dishes in Chinese and in English

    I will always remember for the rest of my life I can never forget when I called on some of the students to read the names in Chinese of the dishes on the menu!!! The entire classroom was laughing and completely mystified about what all those dishes were because they had never heard of any of those before and swore to me that they don't even know what it is and they don't have it in China

    You know nonsense like general tso's chicken hahaha unbelievable

    To be fair though in Boston, NYC, and many areas around the country it is possible to obtain food very similar to what one would eat in China. In the “China town areas” and elsewhere. Just not at all the corner Chinese restaurants on every corner.
