I have been offered the chance to fight on a few unlicensed boxing bills, as far as i can tell they seem to be legit holding proper shows in nightclubs just like the pro boxing really apart from no license, is there still a danger of it being dodgy?

Well the short answer is obviously yes, there is a chance it could be dodgy. As you say some of these events are well put together with proper precautions taken, others wont be. At the end of the day it comes down to your judgement and how happy you are with the setup.

i know a fella by the name of mousey who has been involved in a lot of unlicenced fights. he's a hard bastard but he is so punch drunk and dozy now though aswell. sponge bob nose and gappy teath. i think he's made some money from it but its not really worth it if you ask me.
Un licesenseed boxing is dirty. My dad grew up in Youngstown Ohio back in the mid sixties. He was a air force champ and a silver glove champ. The people you will run into at these things can do more damage to you than anything that can step into a ring. They will make you throw fights. Exspecialally in Youngstown Ohio. I dint know how Pavlik has a perfect record. I thought someone would get to him and pay him off to toss a fight.

I dont know much about it today, but in the days of Lenny Mclean and Roy Shaw it could get pretty dodgy and incredibly violent

Don't do it. There are horror stories here in the US about some of these toughman contests that take place in states with weak or no boxing commissions. One story I heard was a show with no doctor or ambulance. Some of the competitors were drunk and/or extremely out of shape. Guys had heart attacks or got pummeled into a coma, or worse. Better to stay in legit boxing where there is at least some regulation and safety precautions.
