Big E...If you read up, he's apparently a real guy. Another Heavy with a red headband. (You unlock both by winning the under armour sponsored bout in career mode)

KO Rey Mo ...Light-Heavyweight fighter (Burger King fighter. You have to win the BK sponsored fight in career mode and you unlock "The King" as a trainer too)

I've never seen Big E nor Goliath whilst I was playing, but I always thought that Rey Mo was some sort of a good fighter that I'd never heard of, and had scraped his way into the stable of legendary fighters in the game. That explains that then....
