I don't know about amputee's but there's a Heavyweight MMA fighter called Tra Telligman who only has one pectoral. He's a tough S.O.B as well, big puncher.

I don't know about 1 armed boxers, but I saw 2 guys in wheelchairs put on the gloves. Funniest damn thing I ever saw. What the hell could a one arm boxer do Jab someone to death

Well considering Zab Judah has managed to make a succesful career despite being born with no chin and Aduley Harrison managed to win an Olympic Gold medal despite being born with a heart then I'd say probably a one armed boxer could still be relatively succesful
About the one arm I'm not so sure but I do know there was some obscure boxer who only had 1 lung.
Well there is this Hong Kong 'Kung Fu' movie called 'One Armed Boxer' starring Jimmy Wang Yu made in 1971! It's a cracker as he goes around beating the crap out of everyone with one arm missing!!
