Coming down in weight
Ingredients
1 medium onion, chopped
1 medium green pepper, chopped
2 garlic clove, minced
1 teaspoon olive oil
16 ounces extra firm tofu, drained and crumbled
1 teaspoon cumin
1 teaspoon hot sauce
salt, to taste
pepper, to taste
1 (19 ounce) can red kidney bean, drained
1 (19 ounce) can white kidney bean, drained
1 (28 ounce) can diced tomato
1 (14 ounce) can tomato sauce
3 medium carrot, sliced
2 tablespoons chili powder
Directions
- 1
Saute first 4 in meduium heat.- 2
Add tofu, cumin, hot sauce, and salt and pepper and saute until crisp and lightly browned (10 min).- 3
Add rest of ingredients (beans, tomatoes, tomato sauce, carrots, and chili powder).- 4
Boil, reduce heat and simmer 45 to 55 minutes.
Also for coming down in weight
Ingredients
3 tablespoons low-sodium soy sauce
1 tablespoon dark sesame oil
1 tablespoon rice vinegar
1 teaspoon sugar
1 (14-ounce) package water-packed extra-firm tofu, drained and cut into 1-inch cubes
5 cups small broccoli florets
1 1/2 cups (1/4-inch) diagonally sliced carrot
1/2 cup peeled, chopped broccoli stems
2 tablespoons canola oil
1 1/2 cups sliced green onions
1 tablespoon grated peeled fresh ginger
2 garlic cloves, minced
1 cup snow peas, trimmed
1 (14-ounce) can whole baby corn, drained
1 (8-ounce) can sliced water chestnuts, drained
1/2 cup vegetable broth
1 tablespoon cornstarch
1/2 teaspoon salt
4 cups hot cooked short-grain rice
Preparation
Combine first 5 ingredients, tossing to coat; cover and marinate in refrigerator 1 hour. Drain in a colander over a bowl, reserving marinade.Cook broccoli florets, carrot, and broccoli stems in boiling water 1 1/2 minutes; drain. Plunge into ice water. Drain.
Heat canola oil in a wok or large nonstick skillet over medium-high heat. Add tofu; stir-fry 5 minutes or until lightly browned on all sides. Stir in onions, ginger, and garlic; stir-fry 30 seconds. Stir in broccoli mixture, snow peas, corn, and water chestnuts; stir-fry 1 minute. Combine broth and cornstarch, stirring with a whisk. Add cornstarch mixture, reserved marinade, and salt to pan; bring to a boil. Cook 2 1/2 minutes or until slightly thick, stirring constantly. Serve over rice.
Trust me on this one,this stuff crushes
I love tofu. It's my favorite munchy.
I just dice and fry 'em along with broccoli. Melted cheeze for the dippin'.. and ready to go.

Thats why I wanted to start this thread,its hard enough keeping weight,you shouldnt eat total crud or rice cakes the entire time. Its the second time its come up recently,and I couldnt think of anything more helpful to do then give younger fighters an idea that you could eat well,but eat smart
To maintain what I consider my fighting weight,I have to constantly dicker with my diet,but I dont want to be eating straw from a trough either

Remember, real men eat their tofu raw-- and perhaps with habanero peppers to wash down the intense joy.
BTW, does anyone have any unique recipes for a damn good salad?
Back in the states I'd just eat a couple leaves of romaine lettuce, with tomatoes, some olive oil, half a squeezed lemon, garbanzo beans, some fruit, and special sauce to top it off.
When eating with my dad's european friend, I came to realize that you don't even need lettuce at all. His russian wife considered lettuce rabbit food. Going for unique you can go overkill with the tomatoes, substitute some other kind of leafy greens, and with all the flavorings out there you have a lot of different ways to go. What would your salad of pure awesomeness be like?

I'll also have to mention the bit about the apple sauce to my dad. You see my dad has trouble getting my little sister to eat a salad, so the apple sauce along with some other cut up fruits might change her disposition. Do you have any other ideas on how to get a stubborn mac-n-cheese eating kid to eat healthy?
On another note, what kind of seasoning, or flavors would you add to a salad to give it an extra zing? (assuming you're not going to burry the veggies under a meat and dairy factory) There's some veggies with a strong flavor of its own.

For someone who doesnt like veg very much, this soup helps me down my greens.
Brocolli Soup.
Cut the all florets off the brocolli. Salt the boiling water and put the brocolli in there for about 4-5 minutes. Drain the brocolli but reserve some of the water which should have a green tinge from the broccoli.
Put the broccoli in a food processor with a ladle or two of the broccoli water. Add a bit of salt and black pepper and a dash of olive oil. The soup should be very thick and to give it some extra taste you can put a couple of bits of feta cheese at the bottom of the soup bowl before you serve it.
Sure thing TM. Let there be light.
Anyways here lays the hidden recipes cut and pasted from the well guarded scrolls of a 5,000 year old gourmet master:
Enter the Oatmeal
1. Throw in your chosen amount of old fashioned or quick oats (not the instant garbage).
2. Cook for 5 minutes (or longer if you like snot...).
3. Add your choice of fruit (frozen works well to cool it down.).
-e.g. strawberries, cherries, mangos, kiwi, avocado, bananas, kumquats, you name it.
4. Add your choice of flavoring.
-e.g. honey, real vanilla extract, choco, cinnamin, spices, almond extract, toe nail clippings, old coffee grinds, blood from 1 year old goat, etc...
5. Top it off with a cup immense gratitude and skim milk if you so desire. You may also add cassein protein to get ready for the long day ahead.
Note: It's always a good idea to use natural sweeteners apart from sugar, such as fruits and/or honey.
Elixer of Zeus (aka Protein Shake)
1. First off, throw in your choice of fruit. This should be done first to allow the blender to do its work without spinning its wheels.
2. Add liquid. (e.g. skim milk, fruit/vegetable juices, anti-freeze, love juices, etc.)
3. Add your choice of protein. (e.g. whey, cassein, powdered milk, crunchy peanut butter, buffalo chunks, etc.)
4. Add your choice of flavoring. (see 'Enter the Oatmeal', example #4)
5. Add some crushed ice.
6. Press the WerRrRrrRRrrr button.
7. Thank Zeus for such a glorious meal and enjoy.
