Frank retired a few months ago at a SteukeForce show, I wasn't sure if Liddel is retired or not (Dana says yes, again, but Chuck seems rather uncommitted to a definate answer).
Igor Vovchanchyn was a 5'8" 230lb pudgy Ukranian kickboxer. He had an amazing 32 fight win streak, that included 7 one-night 8-man tournaments, he was runner up in Pride's inaugural GP in 2000, retired with a 49-10-1,1 record. Also had 61-2 kickboxing record. Frank Shamrock was the greatest UFC champion ever (in my opinion), he came to the UFC with a 14-7,1 record as a former King of Pancrase, he beat Kevin Jackson for the UFC LHW title and made four successful defenses, including Igor Zenvoviev (Extreme Fighting's champion) and Tito Ortiz. He retired as the UFC champion in 1999 due to a lack of competition.
Rickson Gracie was, according to Royce, the Gracie family champion and 10x better than himself. He had an MMA record of 11-0, winning Vale Tudo Japan: '94 and '95, he is also undefeated in BJJ, wrestling, Judo, and has one loss in Sambo (which he disputes due to a riles confusion), he claims a combined record of over 400-0 in all forms grappling. I think his "record" is inflated, but the man was phenominal
Bas Rutten was a former King of Pancrase and UFC HW champion. He opened his career 7-4 with losses to Funaki, Frank, and Ken Shamrock (2x), but he ended his career with an incredible 20 fight win streak. He avenged his Los to Funaki and Frank (2x), he was forced to retire due to injuries after Kevin Randleman for the UFC HW title.
