Like water always filling it's container and the surface being flat, in our reality?

Not really you live your life accepting many things you have not personally proved are true. You are just re-inventing empirical evidence pretending that every scientist tests everything they believe, rejecting the documentation of all others. It's called objective reality. If someone makes a claim that something is true, then I should be able to observe it, test it, repeat it, measure it.

So you don't understand the physics of water? All you have to do is provide a physical, practical demonstration of a standing body of water conforming to the exterior of a shape to prove your belief true.
