It’s really the facility that would get sued not you. You did nothing wrong but potential undercook or use old food, it’s the facilities responsibility to maintain food safety. It’s probably in their insurance or state law

Dude, to use enough butter to cook the 20 lb of mashed potatoes will be a little bit expensive for us. I feel guilty but we may have to use something like margarine. Instead of butter. Due to the cost.
