The key is the elbow.
That pulley machine you got can help. A good exercise that Scrap can vouch on is plyometrics, in this case ones that stress the elbow joints and the surrounding muscles. One example is explosive plyometric pushups, their are other plyometric exercises I could mention that involve barbell, heavybag and medicine balls.

I'd like to get back to what I said about power getting lost in the joints. In regards to the elbow joint you can either smother the arm which cuts off it's range of motion and effective range, or move into the punch in some cases to capitalize in a big bend of the elbow. This can set up a last resort counter, or get in you in the infight; however obviously with slipping or shifting you can avoid the punch all together.
