Back in the states I'd just eat a couple leaves of romaine lettuce, with tomatoes, some olive oil, half a squeezed lemon, garbanzo beans, some fruit, and special sauce to top it off.
When eating with my dad's european friend, I came to realize that you don't even need lettuce at all. His russian wife considered lettuce rabbit food. Going for unique you can go overkill with the tomatoes, substitute some other kind of leafy greens, and with all the flavorings out there you have a lot of different ways to go. What would your salad of pure awesomeness be like?

I'll also have to mention the bit about the apple sauce to my dad. You see my dad has trouble getting my little sister to eat a salad, so the apple sauce along with some other cut up fruits might change her disposition. Do you have any other ideas on how to get a stubborn mac-n-cheese eating kid to eat healthy?
On another note, what kind of seasoning, or flavors would you add to a salad to give it an extra zing? (assuming you're not going to burry the veggies under a meat and dairy factory) There's some veggies with a strong flavor of its own.

Depends on your dressing,but if your doing an Italian,Id put in a little bit of onion,a little bit of oregeno,and I want to stress this A LITTLE BIT of grated Parmesan cheese,and a couple of cherry tomatoes
Mix the onion,and tomatoes in,sprinkle the salad with the oregeno and parmesan,and then pour your dressing over it
Another nice cheat that almost beats even having dressing,take a can of tuna drain the bloody heck out of it,mix it with some low fat mayo(light on the mayo),and just mix your salad in to it. High on protien as well

I love rice pudding for a treat/snack that I've used during weight maintenance and weight loss.
Ingredients:
3/4 cup rice
2 cups milk
1/3 cup sugar
1/4 teaspoon salt
1 egg beaten
2/3 cup raisins
1 tablespoon butter (I actually use only a half table spoon but the original recipe calls for 1)
1/2 tablespoon vanilla extract
Directions:
Boil 1 1/2 cups of water and cook the rice
In another pot combine rice, 1 1/2 cup milk, sugar, and salt.
Cook until creamy stirring occasionally (this should take 15 to 20 minutes)
Stir in remaining 1/2 cup milk, egg, and raisins.
Cook for 2 more minutes constantly stirring.
Remove from heat and add the vanilla and butter. Mix them in well.
This is great served warm but I like it cold too.

This is a great idea. Eating healthy foods does get boring and repetitive.
I have no idea of the nutritional value of this salad, Chris, but I think it is healthy and it tastes pretty damn good.
Mango salad
2 or 3 mangos peeled and cut into pieces
tub of cherry or grape tomatoes
1 large sweet red onion cut into strip size pieces
Feta cheese, 1 cup or so broken into pieces
And I sometimes add a large cooked chicken breast, cut into pieces
(Feel like I'm forgetting something...)
Mix er up and wala.

Here's a nice tasting dish if your in training looking from some starch and carbs.
You take red green peppers, cucumber, auburgine, a potato, an onion and some seeds. Chop them pretty fine, the more you cut the more you eat.
If you have a barbecue or grill, char them on the grate and then toss them in a pan with some light olive oil,

Heres a great healthy lunch... Can of tuna drained, mixed with fat free mayo. Cut up a load of vege's, i usually have lettuce, carrot, tomato and cucumber. Good source of protein and carbs for the middle of the day and is quite filling and nutritious.

For someone who doesnt like veg very much, this soup helps me down my greens.
Brocolli Soup.
Cut the all florets off the brocolli. Salt the boiling water and put the brocolli in there for about 4-5 minutes. Drain the brocolli but reserve some of the water which should have a green tinge from the broccoli.
Put the broccoli in a food processor with a ladle or two of the broccoli water. Add a bit of salt and black pepper and a dash of olive oil. The soup should be very thick and to give it some extra taste you can put a couple of bits of feta cheese at the bottom of the soup bowl before you serve it.
Potato and pumpkin Mash.
I hate mashed potato but this recipe is very good. Goes with just about anything, especially a cooked chicken breast.
Boil your poataos and pumpkin in salted water. Dont forget to half your potatoes and cut up your pumpkin and peel the skin so it boils quicker. I use about 40/60 ratio between the quantity of pumpkin and potato.
Boil for approx 10 mins but put a knife through to check.
Drain and mash. Put in a bit of milk, the amount you need is up to you as each person likes a slightly different consistency. i use about 2 tsp when mashing 3 small/mid potatos and an equal size of pumpkin.
When mashed, add 2 spoons of grain mustard. mix in and its ready. A bit of chopped parsley mixed in tastes good if you have any

This is pretty good.
Heat a little extra virgin olive oil....
Add some:
leeks, prep for 3 mins
onions,
mushrooms,
clove of garlic,
courgettes,
tomoatoe puree (100% natural)
sundried tomatoes.
MIX......
Add to Minced beef or chicken and serve with wholewheat pasta.
POWER FOOD.
