What do you think of Catch weights?

At the end of the day no-one "makes" anybody sign a contract. If they are not comfortable with the details they shouldn't sign the contract.

I'd love to sit you in front of a multi-million dollar contract just to see you NOT sign it because you were uncomfortable with it's terms.

It's a fair comment but it's very rare a world class fighter will take a fight expecting to lose.
